Spinach Manicotti with Onda 48 Junmai Daiginjo sake

I’m pairing Spinach Manicotti with Onda 48 Junmai Daiginjo sake. This sake is made with a special rice varietal called, Ippon-Jime, grown on the brewer’s property. The taste is ladened with savoury mushroom and sauteed onions. The texture on the palate feels as if the sake was filtered through a coarse mesh with fine rice particles still remain. Incredibly detectable and distinctive sake experience.
