Born, Nihon no Tsubasa (Wing of Japan), Aged Junmai Daiginjo
This pale, straw color sake is aged two years under 0° C temp. It is an award winning, prestigious sake that is served to First Class passengers on Japan Airlines and has also been served to foreign dignitaries at government banquets in Japan.
A visually opulent sake with ripe honeydew on the nose and has a luxurious mouthfeel on the palate. This sake finishes dry with a hint of salinity at the fringes that would compliment a wide range of light to rich dishes. I’ve observed that the colder the sake, the texture becomes viscous and a taste of ripe melon emerges into the foreground.
A complex flavor profile makes this a must try Sake for newcomers as well as connoisseurs alike.
